Mango Macadamia Nut Salsa

List of Ingredients
4 tomatoes, diced
1/4 fresh chili, diced
2 scallions, chopped fine
2 tablespoons fresh mint leaves, chopped
1 tablespoon cilantro leaves, chopped
juice of 1 lime
3 tablespoons olive oil
3 ounces macadamia nuts, coarsely chopped
1 ripe mango, peeled and small dice
1 pinch sugar
salt, pepper, cayenne pepper to taste
Recipe
Toast the macadamia nuts lightly in an ungreased frying pan. Combine the tomatoes with chili, scallions, mint, coriander, lime juice and olive oil. Add the macadamia nuts and then the mango Season with sugar, salt, pepper and cayenne to taste. Makes 4 cups.
