Salsa Con Cilantro

List of Ingredients
4 plum or roma tomatoes, diced
1 small red onion, diced
3 cloves garlic, pressed or mashed with salt
juice of 1 lime
1/3 cup chopped cilantro leaves
jalapeno pepper to taste, fine chopped
salt and pepper to taste
Recipe
Combine all ingredients in a bowl. Refrigerator, stirring every so often, so that the ingredients are well mixed. Serve cold. This salsa will only last a few days in the fridge.
Serving Suggestions: I like to make salsa a couple of hours ahead so that it has time for the ingredients to meld. I also like to serve it very cold with warm, toasted, tortilla points. The contrast is great!
This salsa is also really great as a marinade for chicken that you are going to throw on the grill. Remember not to eat the marinade after putting raw chicken in it.
