Apple Cider Cream

4 cups apple cider
3 cups heavy cream
2 whole shallots, diced fine
4 ounces butterRecipe
Heat sauce pan to medium high heat. Add 1 tbl. of butter (reserve the remainder). Add shallots. Cook for 1 minute to soften. Add apple cider, then turn heat source to high heat and reduce sauce by 1/2 volume. Remove from heat, season and whisk in butter.
