    Cheese: Cheese Sauce

    List of Ingredients

    1 tablespoon margarine
    2 tablespoons all-purpose flour
    1/4 teaspoon salt
    1/4 teaspoon dry mustard
    1/8 teaspoon pepper
    1 cup skim milk
    1 cup shredded lowfat Cheddar cheese- (4 ounces)

    Recipe

    Heat margarine in 1-1/2-quart nonstick saucepan over low heat. Stir in flour, salt, mustard and pepper. Cook over low heat, stirring constantly, until margarine is absorbed; remove from heat. Gradually stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in cheese until melted. Makes about 1 3/4 c. sauce.

    MICROWAVE DIRECTIONS: Place margarine in 4-cup microwavable measure. Cook uncovered on high 15 to 20 seconds or until melted. Stir in flour, salt, mustard and pepper until margarine is absorbed. Gradually stir in milk. Microwave uncovered 3 to 4 minutes, stirring every minute, until thickened. Stir in cheese until melted.
