Cucumber Yogurt Sauce

2 cups yogurt
1 cucumber, peel, seed and chop
1 shallot, minced
1 tablespoon minced parsley
1 tablespoon minced fresh mint leaves
1/2 teaspoon ground cumin
1 tablespoon olive oil
1 large pinch salt
ground white pepper to tasteRecipe
Drain the yogurt in a cheesecloth-lined strainer set over a bowl for 1 hour. In a bowl, combine all ingredients. Serve as a salad dressing or as an accompaniment with spicy foods, such as vegetable curry.
