Hollandaise: Mock Hollandaise Sauce

List of Ingredients
1 Stick margarine (1/2 cup)
1 1/2 c Stiff mayonnaise
2 tb Horseradish
1 sm Onion finely chopped
1/2 ts Dry mustard
1/4 ts Cayenne pepper
1/2 ts Salt
2 ts Pepper vinegar or tarragon vinegar Recipe
Place all ingredients in a quart jar and set in a pan of hot water on a low heat. Stir until well blended. Pour over vegetables just before serving. While this is mainly for serving over green beans or other green vegetables, it also makes a good sauce for seafood. Keeps well in the refrigerator.
