    Peanut: Peanut Sauce for Satay

    List of Ingredients

    1 cup chunky peanut butter
    4 fresh red chilies, seeded, sliced
    2 cloves garlic, minced
    2 tablespoons sugar
    1 teaspoon cayenne pepper
    5 tablespoons fresh lime juice
    5 tablespoons dark soy sauce
    3 tablespoons peanut oil
    2 tablespoons water

    Recipe

    Combine all ingredients in a bowl. Heat sauce on high for 1 1/2-2 minutes in the microwave, or place in top of double boiler, cover and cook for 5-10 minutes. Remove sauce from heat source and stir until well blended. Add more water if needed. Use immediately or store in fridge up to 1 week. Makes 2 1/2 cups.
