    Good served with grilled or roasted seafood, or over pasta or roast chicken.

    List of Ingredients




    1 pound ripe plum tomatoes, quartered
    1/3 cup good quality olive oil
    3 tablespoons chopped fresh rosemary
    2 tablespoons pink peppercorns
    2 cloves peeled and chopped garlic
    1/2 c. heavy cream -- (1/2 to 1)

    Recipe



    Preheat oven to 300ºF. Place tomatoes in large roasting pan. Sprinkle oil and then the rosemary, peppercorn and garlic over the tomatoes. Roast the tomatoes for 1 to 1 1/2 hrs. Finish the sauce: Place tomatoes while still warm into food processor or blender, and puree. Add the cream and puree till smooth. Transfer sauce to medium size saucepan and bring to simmer over low heat. Makes 2 cups.
