Put Mayo in a blender, ONE AT A TIME, add 1 or 2 peppers straight from the can, blending this, tasting as you go. 2 peppers is usually enough, adjust to your own taste and heat tolerance. GO SLOW WITH THIS. A little goes a long way. If you like, add some of the adobo sauce, it gives it more of an orange color. It's also hot, so go slow. The idea with these is to use just enough to give it the smoky FLAVOR, not alot of heat.
When you have the proper amount of heat, add about a TBSP of sour cream, or more if you like. Add a TBSP of corn syrup if you want a little sweet taste. These measurements are approximate, this is how I like it, you can adjust and experiment to get it just right. Finally, blend it till it's very smooth and creamy, put it in a airtight bowl and refrigerate quickly. It will be hotter after you blend it up, so use caution or you'll ruin it and have to start over.
