    Tomato: Tomato Sauce - Freezer

    Wash the tomatoes, cut in half and place cut side down on a cookie sheet (with a rim). Add garlic cloves (unpeeled) and sprinkle with just a tiny bit of olive oil. Roast at 375ºF for about 40 minutes (until tomatoes start to turn brown on skins). Then allow to cool. The skins will come right off the tomatoes when you squeeze pulp out into a blender. Same with garlic cloves (the garlic pops right out of the skin). Puree tomatoes and garlic and place in plastic bags and freeze.
