Tomato: Tomato Sauce - Freezer

Wash the tomatoes, cut in half and place cut side down on a cookie sheet (with a rim). Add garlic cloves (unpeeled) and sprinkle with just a tiny bit of olive oil. Roast at 375�F for about 40 minutes (until tomatoes start to turn brown on skins). Then allow to cool. The skins will come right off the tomatoes when you squeeze pulp out into a blender. Same with garlic cloves (the garlic pops right out of the skin). Puree tomatoes and garlic and place in plastic bags and freeze.
