    1/2 cup sugar
    4 teaspoons cornstarch
    1/2 tablespoon fresh gingerroot, grated
    2/3 cup cold water
    2 cups fresh blueberries
    1 tablespoon fresh squeezed lemon juice

    Recipe



    In small saucepan, stir together sugar, cornstarch, gingerroot and salt. Gradually stir in water; cook over medium heat, stirring constantly, til mix thickens and comes to boil. Stir in berries and lemon juice. Reduce heat and simmer on low 5 minutes or till berries tender. Serve immediately, or let cool, cover and refrigerate for up to 3 days. Serve hot over crepes, pound cake or waffles, or cold over ice cream. 2 cups.
