    Filling: Coconut Cream Filling

    List of Ingredients

    3/4 cup sugar
    3 tablespoons cornstarch
    1/4 teaspoon salt
    2 cups skim milk
    1 1/4 cups egg substitute
    1 tablespoon butter
    3/4 cup sweetened coconut flakes
    2 teaspoons vanilla

    Recipe

    Makes 4 cups. In medium saucepan, whisk sugar, cornstarch and salt thoroughly. Add milk and cook over low heat, stirring constantly, until mixture comes to a boil. Remove from heat and whisk in egg substitute and butter. Cook over low heat, stirring constantly, until mixture comes to a boil. Remove from heat and stir in coconut and vanilla. Cool in refrigerator at least 2 hours before using.
