1/2 cup sugar
3 tablespoons cornstarch
1/2 cup very strong coffee
1 1/2 cups skim milk
1 cup liquid egg substitute
1 teaspoon pure vanilla extract
Recipe
In medium saucepan, combine sugar and cornstarch, then slowly whisk in coffee and milk. Cook over medium heat, stirring constantly, until mixture comes to a boil. Remove from heat and whisk in egg substitute. Cook over low heat, stirring constantly, 1 minute. Remove from heat and stir in vanilla. Chill in refrigerator at least 2 hours before using.
