    Curd: Rosie's Lemon Curd

    List of Ingredients

    1/4 teaspoon unflavored gelatin
    1/3 cup + 1 tbl. fresh lemon juice
    4 large egg yolks
    1/2 cup + 1 tbl. sugar
    1 tablespoon unsalted butter

    Recipe

    Dissolve gelatin in lemon juice in a small bowl. Using a whisk, stir yolks and sugar together in small bowl until blended. Combine lemon juice mixture and egg mixture in small heavy saucepan and stir with whisk to blend. Place pan over medium low heat and stir constantly with whisk, bringing mixture just to boiling point. Press mixture through a strainer into a small bowl, stir in the butter, and let it cool slightly 15-20 minutes. Refrigerate until set.
