8 ounces self rising flour
1 1/2 ounces butter
2 ounces sugar or soft brown sugar
1 tablespoon cinnamon
1/8 cup milk
1 squeeze lemon juiceRecipe
Rub fat into flour, stir in sugar, cinnamon and fruit (if any). Add a squeeze of lemon juice to milk to sour it (makes scones rise better) and stir in to make dough. Place dough on floured board and flatten to about 1/2 inch with hand. Cut into rounds with scone cutter. Bake at 400ºF for about 15 minutes, checking early.
