Recipe Introduction
"these cranberry scones are one of my favorites. This recipe comes from the Concord Center Bed and Breakfast in Massachusetts."
List of Ingredients
2 1/2 c. flour
2 1/2 tsp baking powder
1/2 tsp baking soda
3/4 cup butter
1 c. coarse chopped cranberries, frozen or fresh
2 tsp grated orange peel
2/3 cup sugar
1/2 cup buttermilkRecipe
Preheat oven to 400 degrees. Combine flour, baking powder and baking soda in a mixing bowl. Cut in the butter with a pastry cutter or fork, or 2 knives. Stir in cranberries, orange peel and sugar. Stir in the buttermilk just until all ingredients are moistened. Shape dough into 8" circles, 1/2 inch thick on a floured surface. Cut each circle into 8 wedges and place on ungreased cookie sheet. Bake 12-15 minutes or until lightly browned. Makes 16.
You can substitute grated lemon peel for the orange peel. Just before baking, brush with milk or melted butter and then sprinkle with sugar.
