Golden Topped Scones

2 ¼ cups self raising flour
1 teaspoon baking powder
2 teaspoons icing sugar (optional)
1 cup thickened cream
2 tablespoons lemon juice
plain flour for dustingRecipe
1. PLACE flour, baking powder and sugar in a food processor, pulse 5 seconds to combine.
2. PREHEAT the crisp plate on CRISP for 2 minutes.
3. ADD the cream and lemon juice to the flour and process 5-8 seconds only or until a dough is just formed. Turn out onto a floured work surface. Lightly pat out to about 2.5 cm thick. Dip a small scone cutter into flour and press out scones.
4. PLACE on crisp plate, around the outside of the crisp plate ( leaving a small space between each scone). Cook on CRISP for 4 minutes, or until scones are just firm. Quickly turn the scones over. Cook a further 2 minutes on CRISP.
5. SERVE immediately with jam and cream or butter.
Cook's notes: Pulse in the processor until JUST combined. Or the scones will be tough. Do not knead the mixture, simply pat out to a flat shape before cutting. If desired the mixture can be lightly combined using a knife. Again do not over mix.
