Irish Potato Griddle Scones

1 large potato (or 2-3 small), peeled and coarsely chopped
1/4 C. minced fresh parsley
4 Tbs. unsalted butter, melted
3/4 C. unbleached flour
1 large egg, beaten
vegetable oil
Recipe
Place chopped potato in water to cover in a small saucepan. Bring to a boil, and cook for 10 min. or until potato is just tender. Pour off the water and return the pan briefly to medium-high heat to evaporate any extra water. Mash the potato coarsely. Measure 1 cup of potato into a mixing bowl. Stir in the butter, egg, and parsley until the mixture is evenly blended. Stir in half of the flour, mix well, add the remaining flour, and stir well again.
Turn out the dough onto a floured board. Knead dough for 3-4 min.Cut dough in half. Roll out into a circle about 6" in diameter. Cut into 8 wedges. Repeat with other half of dough. Heat cast-iron skillet and brush with oil. Cook the scones, 6-8 at a time, for about 5 minutes on each side, or until they are puffed and lightly browned. Serve hot or at room temperature.
