    Jill's Scones

    Source of Recipe

    James A. Mulvey Residence Inn

    List of Ingredients

    4 cups flour
    4 Tbsps sugar
    6 tsps baking powder
    1 tsp salt
    1/2 cup cold butter
    1 tsp flavoring extract
    2 eggs
    1 pint half & half

    Recipe

Mix dry ingredients together in large bowl. Cut butter in with a pastry blender. Then add other ingredients to create special scones such as: 1 cup blueberries, 1/2 cup chocolate chips, 1 sliced banana, 1/2 cup dried cranberries, 1/2 cup white or milk chocolate chunks, or 1 cup sliced pecans -- or a combination or these (such as chocolate and bananas).

Into a 2 cup measuring cup, break 2 eggs and add enough half & half to measure 1 1/2 cups. To that add extract (vanilla, lemon, almond, whatever matches the flavors of your additional ingredients). Beat with fork and add to dry ingredients. Mix lightly with your hands. Do not overmix.

Form into 12 balls on a greased cookie sheet. Flatten the balls to about 1" thick. Bake at 450° 12-15 minutes until brown. Before baking, you may sprinkle scones with raw sugar crystals.

These freeze well. Thaw and reheat 3 minutes at 350°.
