    Joan's Cornmeal Scones

    2 cups flour
    1 cup yellow cornmeal
    2 tsp. baking powder
    1 tsp baking soda
    1/2 tsp salt or less if desired
    1 Tbs. sugar
    1/2 cup rounded white vegetable shortening
    1 cup buttermilk ( approx)

    Options: grated cheese, chopped nuts, a tsp of dried cilantro, chili powder etc.

    In one bowl sift the dry ingredients. Cut in the shortening until cornmeal consistency. Combine butermilk and egg. Stir in enough buttermilk mixture with a fork until a soft dough clings together.

    Knead briefly with floured hands. Shape or pat into a ball 1 inch thick on a baking sheet. Grate on fresh hard cheese such as Pecorino Romano as desired etc. Score into 8 wedges. Bake 400F until pale golden and done-, about 20 minutes. Do not overbake.

    Note: options: add some chopped toasted pecans into the dough or spice it up with some chili powder, cilantro etc

    Serve warm with softened butter Makes 8

    Note: if desired one can add an egg to the recipe for a softer more tender dough
