    1/2 cup dried currants
    2 cups all-purpose flour
    3 Tbsps granulated sugar
    2 tsps baking powder
    3/4 tsp salt
    1/2 tsp baking soda
    5 Tbsps stick margarine
    1 cup non-fat plain yogurt
    1 egg yolk
    1 egg white, slightly beaten
    Sugar/cinnamon mixture

    Soak currants in hot water to cover, let stand 5 minutes, then drain well and set aside. In large mixing bowl, combine flour, 3 tablespoons sugar, baking powder, salt, and soda. Cut in margarine with pastry blender until mixture resembles coarse crumbs. Stir in drained currants. Blend yogurt and egg yolk, then add to crumb mixture, stirring just till dough clings together.

    Turn out onto lightly floured surface and gently knead 10-12 strokes. Roll or pat dough to 1/2 inch thickness and cut with 2-2 1/2 inch biscuit cutter. Place on ungreased baking sheet. Brush tops with egg white and sprinkle with cinnamon/sugar mixture. Bake in a 425° oven 15-18 minutes or till light brown. Cool on wire rack 5 minutes, then serve warm.
    Yields 16-18.
