    2 1/2 cups all-purpose flour
    2 tablespoons sugar
    2 1/2 teaspoons baking powder
    1/3 cup Carapelli Extra Light Olive Oil
    2 eggs, beaten
    3/4 cup buttermilk
    1/2 cup dried mixed fruits, chopped
    Milk
    Coarse Baking Sugar
    Preserves and whipped butter

    Heat oven to 375°F. In medium bowl, combine flour, sugar, and baking powder. Add olive oil and stir until just moistened. Make a well in the center of the flour mixture. In another bowl, combine eggs, buttermilk and dried fruits. Add egg mixture to the flour mixture. Mix with a fork until just moistened. Turn dough out onto a lightly floured surface. Knead dough by folding and gently pressing the dough until the dough is nearly smooth (about 10-12 strokes). On a baking sheet, pat dough into an 8-inch circle. Brush with milk and sprinkle with coarse baking sugar. Bake 15-20 minutes or until golden brown. Remove from baking sheet. Cut into triangular wedges and serve with favorite preserves and/or butter. Serves 12.

    For Square Scones: Scone dough may also be formed into an 8-inch square. Cut large square into 16 smaller squares and bake as directed above.
