    2 cups All-purpose flour
    2 tablespoons Granulated sugar
    1 tablespoon Baking powder
    1/2 teaspoon Salt
    1/4 cup Butter
    2 Eggs
    1/3 cup Half and half or light cream
    Preserves or jam

    Recipe



    Preheat oven to 400 degrees. In a large bowl, stir together the flour, sugar, baking powder and salt. Cut in the butter until the mixture resembles coarse crumbs. Break the eggs into a bowl, setting aside about 1 tablespoon egg white. Beat the remaining eggs with the half and half. Add to the flour mixture. Stir until just moistened.

    Gently knead the dough 10 to 12 times on a lightly floured surface. Roll or pat the dough to 3/4-inch thickness. Cut the dough into desired shapes with a 2 1/2-inch biscuit cutter. Re-roll as necessary. Place on an ungreased baking sheet. Brush with the reserved egg white. Bake for 12 to 15 minutes, or until lightly browned. Serve with preserves or jam.
