Couscous: Chickpea Vegetable Couscous

1/2 cup vegetable stock
1 medium red onion
3 medium bell peppers
3 medium raw potatoes, sliced
3/4 cup couscous
1/4 cup raisins
2 cups sliced zucchini
3 tablespoons tomato paste
1 teaspoon tomato paste
1 teaspoon ground coriander
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1 clove garlic, crushed
1/2 teaspoon paprika
1/4 cup white wine
10 ounces uncooked couscous
Recipe
Saute onions and peppers in broth. Add remaining ingredients (except couscous) and simmer for 35 minutes. Meanwhile, prepare couscous according to box instructions. Let vegs stand for 10 minutes. Serve over couscous. Serves 8.
