    Couscous: Couscous with Currants & Pine Nuts

    List of Ingredients

    1 red onion, peeled, halved, thin sliced
    1 clove garlic, minced
    2 tablespoons butter
    1/2 cup dried currants
    1/4 cup orange juice
    1 tablespoon honey
    1/2 teaspoon cinnamon
    1 cup vegetable broth
    1 cup precooked couscous
    1/3 cup pine nuts

    Recipe

    In a saucepan, saute onion and garlic in butter until onion is soft, but not browned. Add the next 4 ingredients and simmer mixture for 3 minutes. In another saucepan, bring vegetable broth to a boil. Sprinkle in the couscous, cover pan, and cook mixture for 2 minutes. Remove from heat and fluff with a fork until grains are separated. Stir in the currant mixture until nicely mixed. Heat to serve. Sprinkle pine nuts on top before serving. Serves 6.
