Couscous: Herbed Couscous

List of Ingredients
2 cups couscous
2 cups water
1 tablespoon butter
Salt -- to taste
Freshly-ground black pepper -- to taste
1/2 bunch scallions -- finely sliced
1/4 cup finely-diced Spanish onion
1 tablespoon rice wine vinegar - (to 2 tbspns)
Recipe
Bring water, 1 tablespoon salt, and butter to a boil. Add couscous, remove from heat and stir quickly and thoroughly. Cover for 5 minutes. Moisture will be absorbed. Fluff with a fork. Add scallions, Spanish onion and rice wine vinegar. This recipe yields 4 servings.
