Couscous: Herbed Couscous with Lemon

List of Ingredients
1 1/2 cups water
1/2 teaspoon fresh grated lemon zest
1/2 teaspoon dried thyme
1 cup couscous
1/2 cup packed fresh parsley leaves, minced
2 tablespoons olive oil
fresh lemon juice to taste
salt and pepper to taste
Recipe
In a kettle bring the water to a boil. Pour over the zest, thyme and couscous. Let the mixture stand, covered, for 5 minutes. Fluff it with a fork, and stir in the parsley, oil, lemon juice, and salt and pepper. Yield: 4 servings.
