    Couscous: Lemony Couscous

    List of Ingredients

    2 1/4 cups water
    10 ounces couscous (1 1/2 cups) -- uncooked
    2 tablespoons couscous -- uncooked
    1 1/3 cups seeded chopped tomato -- (1 large)
    1 cup seeded coarsely chopped peeled cucumber
    1 cup thinly sliced green onions
    1/2 cup finely chopped fresh parsley
    1/4 cup finely chopped fresh mint
    1/2 cup fresh lemon juice
    2 tablespoons water
    2 tablespoons olive oil
    1 teaspoon salt
    1 teaspoon pepper

    Recipe

    Bring water to a boil in a medium saucepan; gradually stir in couscous. Remove from heat; let stand, covered, minutes. Fluff with a fork. Combine couscous, tomato, and next 4 ingredients in a large bowl, and toss well.Combine lemon juice and next 4 ingredients; stir well with a wire whisk. Pour over couscous mixture; toss well. Yield: 8 servings
