    List of Ingredients




    2 teaspoons oil
    1/2 cup sliced mushrooms
    2 tablespoons sliced green onions
    1 clove garlic, pressed
    1/2 teaspoon oregano
    1/2 cup tomato sauce
    2 hot baked potatoes
    1/4 cup shredded mozzarella cheese
    2 teaspoons grated Parmesan cheese

    Recipe



    Heat oil in small saucepan. Add mushrooms, onions, garlic and oregano. Toss over high heat 3 minutes. Remove and set aside 6 mushroom slices for garnish. Add tomato sauce to mushroom mixture. Cook and stir over medium heat 3 minutes. Split and fluff potatoes. Spoon half of hot tomato sauce mixture over each potato and top with 2 tablespoons mozzarella cheese; dust with Parmesan cheese. Place on baking sheet. Bake in 450ºF oven 5 to 8 minutes until cheese is melted. Garnish with reserved mushroom slices and parsley. Makes 2 servings
