Mashed: Buttermilk Mashed Potatoes

2 pounds baking potatoes -- peeled,cut 1/2 chunk
3 tablespoons unsalted butter
1/2 cup buttermilk
3/4 teaspoon salt
1/4 teaspoon fresh ground pepper
Recipe
Start potatoes off in large pot of cold water and bring to a boil. Cook until they are very soft, 15-20 minutes. Drain into colander. Mash potatoes. Add butter and beat until melted and smooth. Beat in 1/2 c. buttermilk. If potatoes are still too thick, add more buttermilk, 1 Tbl. at time. Season with salt, pepper and cayenne pepper.
