9 large red potatoes, just baked
1/2 cup unsalted butter, softened
12 ounces cream cheese, softened
3/4 cup sour cream
hot milk if needed
salt and fresh ground black pepper
2 tablespoons unsalted butter, melted
Recipe
Cut the hot potatoes in half and scoop their steaming insides into a large bowl. With an electric mixer, beat in the butter, cream cheese and sour cream. If the mixture seems gummy, add hot milk until you reach the texture you want. Season to taste. You can serve these immediately, or prepare for later reheating. Pack them into a buttered casserole and pour the melted butter on top. then, let cool, cover with foil and chill for up to 48 hours. To reheat, bring the potatoes to room temperature (will take at least 2 hours) and preheat the oven to 300ºF. Bake them uncovered for 20-30 minutes or until heated through. Serves 8.
