Casserole: Cheddar Potato Puff

List of Ingredients
5 lbs. potatoes
1 tsp. salt
3/4 cup margarine
2 cups shredded cheddar cheese
1 cup milk
2 eggs beaten
Dried chives Recipe
1. Peel and boil potatoes in water with 1/2 tsp salt; cook until tender. Drain
2. Mash potatoes until smooth.
3. In a sauce pan melt butter, cheese, milk and remaining salt until smooth.
4. Stir cheese sauce into potatoes; fold in beaten eggs.
5. Pour into a greased 3 qt. casserole.
6. Bake @ 350 for 40 minutes until puffy and golden.
7. Sprinkle with chives before serving.
