Mashed: Cheddar, Bacon & Green Onion Mashed Potatoes

2 slices bacon
1 1/2 pounds baking potatoes, peeled, quartered
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 cup skim milk, heated
2 tablespoons chopped green onions
1/2 cup shredded cheddar cheese
Recipe
Cook bacon until crisp; drain and crumble, then set aside. Place potatoes in medium saucepan; add enough water to cover. Bring to a boil. Reduce heat to medium low; cover loosely and boil gently for 15-20 minutes or unitl potatoes break apart easily when pierced with fork. Drain well. Mash potatoes until no lumps remain. Add salt, pepper and milk; continue mashing until potatoes are smooth. Spoon potatoes into medium bowl, then top with onions, cheese and bacon. Serves 4.
