Scalloped: Creamy Scalloped Potatoes

6 large potatoes
2 cups mock sour cream
2 cups nonfat cheddar, grated
1/4 cup diced onions
3 tablespoons skim milk
1/4 teaspoon pepper
2 tablespoons liquid Butter Buds
1/3 cup crushed seasoned cubed style stuffing
Recipe
Mock sour cream: blend together 16 ozs carton nonfat cottage cheese, 2 tbl. lemon juice, 2 tbl. plain yogurt in blender till smooth. Boil potatoes till tender. Remove from hot water, drain and cool slightly. Peel potatoes and slice very thin. Set aside. Combine mock sour cream, cheese, onion, milk, salt and pepper. Mix potatoes with sauce mixture. Spoon all into 9x13 glass container sprayed with nonfat cooking spray. Combine 2 Tbl. liquid butter buds with 1/3 c. crushed cubed stuffing. Sprinkle crumbs over top. Bake at 300ºF for 30 minutes or til hot and bubbly.
