Easy Potato Galette

4 medium potatoes -- sliced 1/8" thick
3 tablespoons vegetable oil
1/2 teaspoon salt
3 cloves garlic -- finely chopped
2 tablespoons grated Parmesan cheese
2 tablespoons fresh parsley -- choppedRecipe
Arrange potato slices, overlapping in circles (Spiral out starting in the center) in pie plate, 10x1 1/2-inches. Mix oil, salt and garlic; spoon evenly over potatoes. Cover tightly and microwave on high 9 to 12 minutes, rotating pie plate 1/2 turn after 5 minutes, until potatoes are tender. Let stand covered 3 minutes, Sprinkle with cheese and parsley. Remove from pie plate and garnish with thin tomato wedges if desired.
