Mashed: Garlic Cream Cheese Mashed Potatoes

2 pounds potatoes, peeled and chunked
2 tablespoons butter
8 cloves garlic, minced
4 ounces nonfat cream cheese, room temperature
salt and pepper to taste
Recipe
Boil potatoes for about 30 minutes, or until tender, and drain; mash at once. While potatoes are boiling, saute garlic in butter until garlic is softened and just beginning to color. Add to the mashed potatoes. Mash in the cream cheese and seasonings until nicely blended. Serves 6-8
