Candied: Jace's Favorite Sweet Potatoes

10 large sweet potatoes (6 pounds)
4 cups sugar
2 1/2 cups water
1 1/4 cups strained fresh orange juice
3/4 cup strained fresh lime juice
6 tablespoons unsalted butter

Note: the potatoes will have to simmer for a few hours, so plan ahead. Scrub the sweet potatoes, put them into a large pot and cover them with water. Bring the water to a boil; then cover the pot, reduce the heat to medium-low and simmer the potatoes until they're barely tender enough to pierce with a fork, about 30 minutes. Drain the potatoes and let them cool. Peel them, removing all the brownish material below the skin. Cut them in half lengthwise.
Combine the sugar, water and juices and divide between 2 large nonreactive skillets or pans big enough to hold the potatoes in a single layer. Bring the liquid to a simmer. Add the potatoes and turn the heat down to its lowest setting. Cook the potatoes, turning them gently once in a while (tongs are good for this), for about 2 hours or until they are translucent around the edges. Melt the butter. Arrange the potatoes in a serving dish and drizzle them with the butter. Makes 20 potato halves.
