Mashed: Mashed Potatoes with Garlic Oil

5 cups red potatoes, peeled and cubed
3/4 cup skim milk
1 1/2 tablespoons roasted garlic oil -- divided
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
Recipe
Place potato in a large saucepan; cover with water. Bring to a boil, and cook 20 minutes or until very tender; drain. Return potato to pan. Add milk, 1 tablespoon oil, salt, and pepper; beat at medium speed of until smooth. Spoon potato mixture into a serving dish. Drizzle with remaining oil. Serves 4.
