Molasses & Pepper Grilled Sweet Potato Slices

1 3/4 pounds orange fleshed sweet potatoes
3 tablespoons molasses
1 tablespoon oil
1 tablespoon fresh lemon juice
1/2 teaspoon grated lemon peel
1/2 teaspoon salt
1/2 teaspoon black pepper
Recipe
Prepare a medium barbecue fire. Spray the grill rack with cooking spray. Peel the sweet potatoes and cut them lengthwise into slices about 1/8" thick. In a small bowl, stir together the molasses, oil, lemon juice, lemon peel, salt and pepper. Brush the mixture onto both sides of the potato slices. Grill the potatoes, turning occasionally with a wide spatula, until they are golden brown, crisp on the outside, and tender inside, about 10 minutes. Serves 4.
