3 large bag Ore Ida Frozen Hashed Browns -- (11 serving size)
3 large onions, diced (about 6 cups)
4 large cloves garlic, crushed
1 tablespoon ground pepper + more to taste
1 1/2 lb. Gruyere cheese, grated -- (1 1/2 to 2)
1 1/2 lb. Havarti cheese, grated -- (1 1/2 to 2)
3 containers Boursin with herbs, crumbled -- (5 oz containers) (3 to 4)

Preheat the oven to 350ºF (can bake on other temp. to cook along side whatever else you're making). Grease a large roasting pan. In a very large (8-13 quart) bowl, combine the thawed potatoes, onions, garlic and pepper with your hands, tossing until well combined.
Now mix in the smaller quantities of all he cheeses thoroughly. Taste for seasonings, adding more cheeses and more pepper if you want. It is unlikely you'll need salt with all the cheese. Pack the potatoes into the roasting pan, pour the half and half over them, and grind some more pepper on top.
Bake the potatoes uncovered for at least 1 hour, up to 2 hours, depending on how brown you like them. Halfway through the baking, stir the potatoes from the bottom up to get the already formed brown bits mixed throughout. Thereafter, leave the potatoes alone.
If they're getting brown faster than you want, cover the pan or lower the heat; if you have the opposite problem, turn up the heat. This is a very forgiving recipe. Serves 20 or more. Recipe can be easily multiplied indefinitely.
