3 cups potatoes, peel and grate
1 small onion, grated
3/4 cup egg substitute
1/4 cup flour
1/2 teaspoon baking powder
herbs (parsley, dill or sage, etc) -- to taste
salt and pepper to taste
1 tablespoon oilRecipe
Preheat oven to 350ºF. Combine potatoes, onion and egg substitute. Add seasonings and mix well. Add "flour" and baking powder and mix. Spray a 1 1/2 quart baking pan and pour in mixture. Bake 45 minutes to 1 hour or until golden brown and a knife inserted in the center comes out clean. Cut into squares and serve.
