6 medium baking potatoes
2 cups sour cream
1 cup chopped green onions
1 1/2 cups shredded cheddar cheese
1 1/2 teaspoons salt
1/2 teaspoon pepper

Boil unpeeled potatoes until tender, about 20-25 minutes. Cool and then peel. Grate in large bowl; add remaining ingredients. Mix well, then spoon into a 13x9 inch baking dish. Refrigerate 3-4 hours, covered, or overnight. Bake at 350ºF for 40-50 minutes. Sprinkle with paprika. Serves 8-10.
