Casserole: Ranch Potato Casserole

8 medium red potatoes
1/2 cup sour cream
1/2 cup prepared ranch dressing
1/4 cup cooked and crumbled bacon
2 tablespoons minced parsley
1 cup cheddar cheese, shredded
1/2 cup cheese, shredded
1/4 cup melted butter
2 cups lightly crushed cornflakes
Recipe
Cook potatoes until tender. Quarter (leaving skin on) and set aside. Combine sour cream, dressing, bacon, parsley and 1 c. cheese. Place potatoes on greased 9x13 inch pan. Pour sour cream mix over potatoes and gently toss. Top with 1/2 c. cheese. combine corn flakes and butter, then sprinkle over casserole. Bake at 350ºF for 40-45 minutes. Serves 8.
