    4 Yukon Gold potatoes
    4 tablespoons vegetable oil
    salt and pepper
    4 teaspoons parsley

    Recipe



    Peel the potatoes and cut into 1/2-inch wedges. Dry potatoes with a towel. To a heated skillet, add the oil. Add the potatoes, salt and pepper. Sate about 3 minutes, stirring enough to get the potatoes covered in the oil. Transfer to a preheated 340ºF oven for about 30 minutes until potatoes are golden and cooked through. Toss with parsley just before serving.
