Stuffed: Twice Baked Potatoes

4 baking potatoes
2 tablespoons butter
1/2 teaspoon salt
2 tablespoons Parmesan cheese
3 green onions, thinly sliced
1/2 cup milk
4 slices bacon
2 tablespoons grated cheddar cheese
Recipe
Wash, dry and prick potatoes with fork. Bake on rack at 400ºF for 1 hour or until done. Cut thin slice from top of each potato; scoop out pulp into bowl. Mash pulp with milk til fluffy. Beat in butter, green onion and seasoning with pepper, salt, and paprika. Fry bacon and crumble; add to potato mix. Spoon mix back into shells; sprinkle with the cheese. Place potatoes on baking sheet; bake at 375ºF until piping hot and cheese melted (about 15 minutes).
