    Risotto: Chicken & Roasted Garlic Risotto

    List of Ingredients

    4 boneless skinless chicken breast halves
    salt and pepper to taste
    1 tablespoon butter
    1 can campbells cream of chicken soup -- undiluted
    1 can cream of mushroom (roasted garlic) soup
    1 1/4 cups water
    2 1/2 cups uncooked instant rice
    1 cup frozen peas and carrots

    Recipe

    Season chicken with salt and pepper. In a large skillet, cook chicken in butter until browned on both sides. Remove from skillet; set aside. Add soups and water. Bring to a boil. Stir in rice and vegetables. Top with chicken. Cover and cook over low heat for 5 minutes or until internal juices of chicken run clear. Remove from heat. Let stand 5 minutes.
