Egg Fried Rice

1 cup egg substitute
4 1/2 cups cold cooked rice
1 cup frozen green peas, thawed
3/4 teaspoon salt
1/4 teaspoon black pepper
2 cups fresh bean sprouts
1 cup chopped onion or scallion
soy sauce to tasteRecipe
Lightly spray a large nonstick skillet or wok with cooking spray and heat over medium-high heat. Add egg mixture; stir-fry 2 minutes. Add rice; stir-fry 3 minutes. Add green peas, salt, and pepper; stir-fry 5 minutes. Add bean sprouts and onions; stir-fry 2 minutes. Serve immediately. Yield: 6 Servings
