Lemon Rice with Leeks & Herbs

List of Ingredients
1 cup rice
2 cups vegetable broth
2 tablespoons lemon juice
1 teaspoon oil
1 leek (white and 1" of greens), thin slices
2 shallots, minced
1 clove garlic, minced
1 tablespoon minced parsley
1/2 teaspoon thyme flakes
1 teaspoon oilRecipe
In a covered saucepan, simmer together rice, broth, lemon juice and 1 tsp. oil for 30 minutes, or until rice is tender and liquid is absorbed. Meanwhile, in a covered skillet, saute together the remaining ingredients for 20 minutes or until leeks are soft. Toss together rice and vegetables and heat through. Serves 6.
