Lemon Rice with Peas and Parmesan

1 small onion finely chopped
4 tablespoons butter
1 1/2 cups rice
2 cans chicken broth
1/2 cup water
2 tablespoons lemon juice
1 package frozen peas, cooked and drained
4 tablespoons Parmesan cheeseRecipe
In casserole, saute onion in butter til onion is soft. Add rice and saute for 2 minutes, stirring and turning. Carefully stir in broth, water, lemon juice and salt. Cover pan and simmer rice for 30 minutes or til rice is tender and liquid is absorbed. Stir in cooked peas and heat through. Just before serving, toss with grated Parmesan. Serves 6.
