Orzo with Parmesan and Basil

3 tablespoons butter
1 1/2 cups orzo
3 cups chicken stock
1/2 cup grated Parmesan cheese
6 tablespoons chopped fresh basil (1 1/2 tsp dry)
salt and pepper to tasteRecipe
Melt butter in skillet over medium heat. Add orzo and saute 2 minutes until slightly brown. Add stock and bring to a boil. Reduce Heat, cover and simmer until orzo is tender and liquid is absorbed, about 20 minutes. Mix in Parmesan and basil. Season with salt & pepper. Variation: For a creamier pasta dish, try stirring in 2 Tbsp. plain yogurt thinned with a little mild. Serves 6.
